Burton Pale Ale

This is a slightly modified version of a recipe that I got off of a
White Labs brochure. It makes a very good English style Pale Ale.

Beer: Burton Pale Ale Style: English Pale Ale
Type: Extract w/grain Size: 5 gallons
Color:
14 HCU (~9 SRM)
Bitterness: 31 IBU
OG: 1.051 FG: 1.011
Alcohol: 5.2% v/v (4.1% w/w)
Water: 1 tsp. Burton Water Salts.
Grain: 4 oz. Victory Malt
8 oz. British Carastan Malt (15L)
4 oz. British Crystal Malt (75L)
Steep: Steep all grains for 30 minutes @ 160° F.
Boil: 60 minutes SG 1.085 3 gallons
7 lb. Telford's Ultra Light malt extract
1/4 tsp. Irish Moss (15 minutes)
1/4 tsp. Yeast Nutrtient (15 minutes)
Hops: 2 oz. Fuggles (4.5% AA, 60 min.)
1 oz. Kent Goldings (5.6% AA, 20 min.)
1 oz. Kent Goldings (aroma)
Yeast: White Labs #WLP023 (Burton Ale) pitched directly into wort.
Carbonation: 1/2 cup corn sugar
