Honeymoon Irish Ale (Smithwick's Clone)

This is a "Smithwick's Clone", a popular Irish
ale that is not imported to the US.
It turned out dark, mild, rich, and smooth. From

Type: Extract w/grain Size: 5 gallons
Color:
36 HCU (~17 SRM)
Bitterness: 21 IBU
OG: 1.050 FG: 1.010
Alcohol: 5.2% v/v (4.1% w/w)
Water: New Hampshire spring water, bought commercially.
Treated water with 1 tsp Gypsum.
Grain: 1 lb. American crystal 20L
.25 lb. Roasted barley
Boil: 60 minutes SG 1.084 3 gallons
6 lb. Light malt extract
5 oz. Corn sugar
Hops: 1.5 oz. Fuggles (4.75% AA, 60 min.)
.5 oz. Kent Goldings (5% AA, 15 min.)
Yeast: Wyeast Irish Ale (tube). No starter (but will next time).
Log: Brewed: July 2000
Tasting: Will do the following next time (reflective of our more seasoned brewing procedures): Two-stage fermentation, yeast starter,
7.5 lbs extract, 6 oz malted barley (instead of 4), will calculate priming sugar for 2.2 volumes
of CO2.
