1.00 lb. Wheat malt
2.00 lb. American crystal 40L
8.0 oz. American crystal 60L
2.00 lb. Dextrine malt (Cara-Pils)
2.0 oz. Roasted barley
Mash: 54% efficiency
Single infusion mash 155F for 60 min.
Boil: 90 minutes SG 1.049 13 gallons
2.00 lb. Honey
2 tsp. Irish Moss 15 min. from end of boil.
Hops: 1.00 oz. Centennial (9.4% AA, 60 min.)
1.00 oz. Mt. Hood (3.5% AA, 30 min.)
1.00 oz. Kent Goldings (5% AA, 30 min.)
2.00 oz. Kent Goldings (aroma)
Yeast: I split the 10 gal. batch into 2 fermenters.
Wyeast 1028 London Ale - 5 gal.
Wyeast 1056 American Ale - 5 gal.
Log: Ferment both for 7 days @ 70F then transfer to secondary for 7 more. I dry hopped 1/4 oz. Kent Goldings leaf hops (4.5%) to secondary of the Wyeast 1028 batch.
