English Honey Blonde

This recipe is a variation of a staple honey blonde recipe I made.
I used British grain, hops and yeast. My setup only allows for about 70% mash efficiency, so adjust accordingly. Hope you enjoy it!

Brewer: Eric D'Ancicco Email: ericd@jrcamerica.com
Beer: English Honey Blonde Style: British Honey Ale
Type: All grain Size: 5 gallons
Color:
5 HCU (~5 SRM)
Bitterness: 48 IBU
OG: 1.059 FG: 1.008
Alcohol: 6.6% v/v (5.2% w/w)
Water: I live in Washington state. Our water sits at 7 Ph naturally, so I did nothing to my water.
Grain: 1 lb. American 2-row
4 lb. British pale
1.5 lb. American crystal 10L
Mash: 70% efficiency
My lauter/sparging system isn't the greatest, so the best I could get was 70% efficiency. Other than being a little low, I didn't do anything special during the mash. It was a single step infusion mash resting only at 150° for 60 miutes.
Boil: 60 minutes SG 1.074 4 gallons
3 lb. Honey
I used a tsp. of Irish Moss at 45 minutes.
Hops: 1 oz. Brewers Gold (8.5% AA, 60 min.)
.50 oz. Brewers Gold (8.5% AA, 45 min.)
.50 oz. Kent Goldings (5% AA, 30 min.)
.5 oz. Kent Goldings (5% AA, 15 min.)
.5 oz. Kent Goldings (aroma)
Yeast: I used Wyeast 1335 British Alle Yeast II. No starter, but in hind sight, it wouldn't have been a bad idea.
Carbonation: 3.0 volumes Corn Sugar: 5.81 oz. for 5 gallons @ 70°F
Tasting: The only thing I would change is the hop profile a little bit. I would reduce the bittering hop amount a little bit. This beer would have been perfect around 30 IBU.
