OG: 1.049 FG: 1.008
Alcohol: 5.3% v/v (4.2% w/w)
Water: 1 Tbls CaCl2
Grain: 7 lb. British pale
7 lb. German Pilsner
4 lb. Rice (raw)
Mash: 85% efficiency
Cook rice before mash begins. Dough in with
85C° H20 temp about 62C°. add some cold H2O
temp 55C° Hold 15 min. Add in rice. Temp about
60C° Hold about 30 min. Added more sparge H20
but didn't really bring it up. Took about 2
gallons of runoff and brought it into a boil
and put it back into the mash. Temp 66C°.
Hold about 1 hour. start Sparge. Collect
runnings, but they never really got to clean.
Boil: 60 minutes SG 1.045 13 gallons
added 3 whirflocs @ 20 min to knockout.
Hops: .5 oz. Cascade (5.7% AA, 60 min.)
.5 oz. Liberty (4.1% AA, 60 min.)
1 oz. Perle (6.6% AA, 60 min.)
2 oz. Liberty (4.1% AA, 20 min.)
1 oz. Liberty (aroma)
Yeast: Wyeast 1098 British Ale from a previous batch.
Taken from carboy during kegging.
Log: transfere to secondary 12/20/04
Move to chest freezer 12/22/04
Keg beer 1/9/05 very clear nice flavor.
