One of my first partial mash recipes. Turned out nicely. The yeast is really the signature of this beer.

Type: Partial mash Size: 6.2 gallons
Color:
16 HCU (~10 SRM)
Bitterness: 23 IBU
OG: 1.083 FG: 1.019
Alcohol: 8.3% v/v (6.5% w/w)
Grain: 3 lb. Belgian Pilsner
8 oz. Belgian aromatic
8 oz. Belgian biscuit
4 oz. Dextrine malt (Cara-Pils)
10 oz. Belgian CaraVienne
4 oz. Flaked barley
Mash: 37% efficiency
Mash at 150°F for 60min.
Boil: 90 minutes SG 1.064 8 gallons
8 lb. Light malt extract(liquid)
1 lb. Light dry malt extract
1 lb. Wheat extract(55%wheat)
1.5 lb. Belgian candi sugar
Hops: 1 oz. Styrian Goldings (4.7% AA, 80 min.)
0.5 oz. Tettnanger (5.4% AA, 80 min.)
0.5 oz. Saaz (2.2% AA, 25 min.)
0.5 oz. Saaz (2.2% AA, 10 min.)
Yeast: Wyeast 3522 Ardennes
Log: Fermented @70°F for 10days
Conditioned @60°F for 35days
Carbonation: 6.5oz corn sugar for bottle priming
Tasting: Very fruity/spicy early on from the yeast. Fruitiness faded over time into the malt.
