Munich Vacation Ale II

This is an update of a delicious beer I brewed in January 1998 after a visit to Munich, Germany.

Type: All grain Size: 6.5 gallons
Color:
7 HCU (~6 SRM)
Bitterness: 22 IBU
OG: 1.047 FG: 1.011
Alcohol: 4.6% v/v (3.6% w/w)
Water: 1 tsp. gypsum - added at beginning of boil.
Grain: 2 lb. American 2-row - Klages
4 lb. German Pilsner
4 lb. German Munich
1 lb. Dextrine malt (Cara-Pils)
Mash: 75% efficiency
Mash at 135F for 15 min.
Mash at 158+F for 45 min.
Boil: 60 min. minutes SG 1.087 3.5 gallons
Irish Moss - 45 min. into boil.
Hops: 3 oz. Hallertauer (2% AA, 60 min.)
1 oz. Cascade (6% AA, 30 min.)
Yeast: Wyeast 1338 - European ale yeast (from Wissenschaftliche in Munich). Starter used.
