Depth Charge Lager

My wife and most supportive critic, Val, wants a homebrew that
approximates Foster's Lager. Here goes...

Type: All grain Size: 5 gallons
Color:
2 HCU (~2 SRM)
Bitterness: 23 IBU
OG: 1.042 FG: 1.006
Alcohol: 4.6% v/v (3.6% w/w)
Water: distilled water
Grain: 5 lb. American 2-row
.25 lb. Dextrine malt (Cara-Pils)
.75 lb. American 6-row
Mash: 67% efficiency
ACID REST: Mash in at 35°C to 41°C with 6 liters of water, and rest
for 2-3 hours; PROTEIN REST: Raise temp. to 56°C, and rest 30';
SACCHARIFICATION: Mix in 2.75 liters water (100°C, and rest at 65.5°C
for 60'; check with iodine for conversion; mash out at 77°C; sparge
with 2.5~3 gal water (77°C); collect about 3.5 gal of runoff; top up
to 6.5 gal; start boil.
Boil: 60 minutes SG 1.032 6.5 gallons

Hops: 12.2g Pride of Ringwood (8% AA, 60 min.)
15.7g Tettnanger (4.4% AA, 30 min.)
14g Tettnanger (aroma)
Yeast: Wyeast 2278 Czech Pils lager
Carbonation: 2.6 volumes Corn Sugar: 132g for 5 gallons @ 20°C
