Tim's Y2K CyBeer

A highly carbonated Cider Beer. Very crisp and dry.. Very much like a Champagne. Improves greatly with aging.

8 HCU (~6 SRM)
Bitterness: 12 IBU
OG: 1.048 FG: 1.006
Alcohol: 5.4% v/v (4.3% w/w)
Water: All volumes of water should be substituted with pasteurized apple cider. Don't make the mistake of using fresh, unpasteurized cider or juice from concentrate. Splurge and by the real thing.
Boil: 60 minutes SG 1.080 3 gallons
6.46 lb. Light malt extract
2 tsp Irish Moss during last 15 minutes.
Hops: 1.18 oz. Saaz (3.75% AA, 60 min.)
1 oz. Saaz (aroma)
Yeast: Pasteur Champagne
Carbonation: 3.2 volumes Honey: 6.46 oz. for 4.5 gallons @ 70°F
Use of honey for bottling leaves you with flowery aroma and slight sweetness. Corn sugar may be substituted.
