Multiple Personality Ale

Bitterness: 34 IBU
OG: 1.071 FG: 1.018
Alcohol: 6.8% v/v (5.4% w/w)
Water: add 1 tsp gypsum. (2 tsp if using relatively soft water.)
Grain: 3 oz. American 2-row
3 oz. American crystal 60L
3 oz. Dextrine malt (Cara-Pils)
3 oz. Belgian CaraVienne
1 oz. American chocolate
1 oz. American black patent
1 oz. Roasted barley
3 oz. Flaked barley
3 oz. Flaked oats
3 oz. Flaked rye
Steep: steep 30 minutes at 155 - 160°F before adding malt.
Boil: 60 minutes SG 1.118 3 gallons
4 lb. Light malt extract
2 lb. Amber malt extract
1 lb. Dark malt extract
2 lb. Wheat extract
1/2 tsp. irish moss with aroma hops.
Hops: .25 oz. Centennial (10.5% AA, 60 min.)
.25 oz. Chinook (12% AA, 60 min.)
.25 oz. Galena (13% AA, 60 min.)
.25 oz. Hallertauer Mittelfruh (5% AA, 60 min.)
.25 oz. Nugget (12% AA, 60 min.)
.25 oz. Perle (8% AA, 60 min.)
.25 oz. Cascade (6% AA, 5 min.)
.25 oz. Kent Goldings (5% AA, 5 min.)
.25 oz. Liberty (4% AA, 5 min.)
.25 oz. Mt. Hood (4.5% AA, 5 min.)
.25 oz. Saaz (3.75% AA, 5 min.)
.25 oz. Willamette (5% AA, 5 min.)
Yeast: 2 pks Nottingham dry yeast or Wyeast liquid
Carbonation: 2.3 volumes Corn Sugar: 4.01 oz. for 4.9 gallons @ 75°F
batch primed with 3/4 cup corn sugar just before bottling
