Easter Ale

in order to facilitate the receipe format I put the sugar content value for maple syrup instead of maple sap which I used instead of water (5 gal.) and it had a OG of 1012 on the hydrometer.

Type: Extract Size: 5 gallons
Color:
3 HCU (~3 SRM)
Bitterness: 10 IBU
OG: 1.058 FG: 1.004
Alcohol: 7.0% v/v (5.5% w/w)
Water: checked with the local health board to see if there is any harm in raw maple sap (you know where bears sh#t), and they said it would be ok .
Boil: 45 minutes SG 1.145 2 gallons
2 lb. 8 oz. Light malt extract
2 lb. 8 oz. Corn sugar
3 lb. 8 oz. Maple syrup (5 gallons sap)
added lme and dextrose hops at this time
Hops: 1.5 oz. Fuggles (4.75% AA, 45 min.)
.05 oz. Fuggles (4.75% AA, 15 min.)
Yeast: coopers and 1 tsp nuitrient 1hr @ 75 F.
Log: very active ferment in six hours finished in 5 days at 1004 temperature 73F average. I was surprised at the low fg I assume the sap to be highly fermentable.racked after 2 days,issinglass day 5 cleared in 2 days.
Carbonation: 1/2 cup dextrose in the keg 72F 5 days , 10 psi 12 hours at 35F.
