2001 Christmas Special Spice

Brewed a hearty brew to commemorate the holiday season. This spicy brew should warm even on the coldest of Midwest winter evenings.

19 HCU (~11 SRM)
Bitterness: 15 IBU
OG: 1.067 FG: 1.018
Alcohol: 6.3% v/v (5.0% w/w)
Water: Good ole Chicago tap water
Grain: 22 lb. British pale
1 lb. Belgian aromatic
1 lb. Belgian biscuit
8 oz. Belgian Special B
1 lb. Raw wheat
Mash: 55% efficiency
Boil: 60 minutes SG 1.057 13 gallons
5 lb. Honey
At 15 minutes the following was added:
12 cinnamon sticks, 1 ounce of fresh ginger, two teaspoons of ground orange peel, 12 whole cloves, 10 all spice balls, one teaspoon nutmeg.
Hops: 1 oz. Tettnanger (4.5% AA, 60 min.)
1.5 oz. Styrian Goldings (4% AA, 30 min.)
0.5 oz. Styrian Goldings (4% AA, 15 min.)
Yeast: Wyeast 1056 for 6 gallons and Wyeast Belgian Abbey II for 5 gallons
