Sweet Honey Ale

Type: Extract Size: 5 gallons
Color:
6 HCU (~5 SRM)
Bitterness: 10 IBU
OG: 1.061 FG: 1.022
Alcohol: 5.1% v/v (4.0% w/w)
Boil: 60 minutes SG 1.204 1.5 gallons
4 lb. Light dry malt extract
3 lb. Honey
1 tsp Irish Moss (20 mins)
Hops: 2 oz. Cascade (6% AA, 60 min.)
Yeast: WLP051 California V Ale Yeast
Log: pitched yeast at 70°F. Note: to folks that use imersible wort chillers make sure the hops are sparged before the wort is chilled
the honey has tendency to coagulate in the hops when its cooled.
Carbonation: 1 3/4 cup of light DME. 1/2 cup of honey can be substituted, though that may cause the honey flavor to be a little overpowering.
Tasting: mmmmmmmm honey.....
I would sparge the hops better. I think I lost alot at that point.
A lager yeast WLP840 American Lager can be substituted if you care to lager instead.
