Hump's Hazelnut Brown Ale

After having Long Shot Hazelnut Brown and Rogue's Hazelnut Brown, I had to try to make one myself. This beer came out quite tasty.

Type: Extract w/grain Size: 3 gallons
Color:
45 HCU (~20 SRM)
Bitterness: 32 IBU
OG: 1.055 FG: 1.017
Alcohol: 4.9% v/v (3.9% w/w)
Water: Publix-brand drinking water
Grain: 4 oz. American crystal 60L
2 oz. Roasted barley
Steep: I steeped the grains for about 45 minutes with the temperature starting at about 90 and rising all the way to 190. Its not a very proper schedule, but its the easiest way and also the way presented by Papazian for intermediate brewers. I just put the grains in (in a hop-sack) after I put the kettle on the burner, and remove them when the temperature approaches boiling.
Boil: 40 minutes SG 1.083 2 gallons
1 lb. 9 oz. Light malt extract
1 lb. 9 oz. Amber malt extract
1 lb. Amber dry malt extract
I used 1 tsp. Irish Moss in the final 15 minutes of the boil. The intent is to make the beer finish a little clearer, but it doesn't
really make a difference considering how dark the beer is...

After the wort cooled, I strained it (to remove the irish moss bits) into a 5 gallon glass carboy.
Hops: 1/2 oz. Perle (8% AA, 40 min.)
1/2 oz. Perle (8% AA, 20 min.)
1/2 oz. Perle (8% AA, 10 min.)
Yeast: White Labs Liquid Yeast - East Coast Ale Yeast
Log: I let this one sit in the primary for 5 days, and then I transfered it to the secondary (a 3-gallon glass carboy) for another 11 days (almost 2.5 weeks).

After the secondary, right before bottling, I added the hazelnut flavor from which this brew's name comes from. See the Carbonation section for details...
Carbonation: After the secondary, in addition to the usual priming sugar (2 oz. boiled in one cup of water), I also added one container (25 ml / 0.85 oz.) of Hazelnut Essence.
Tasting: Not very bitter. It tastes like candy. The hazelnut aroma is intense and lasts through the flavor all the way to the finish. Next time I'll use less hazelnut flavor (or I'll use the same amount in a bigger batch...)
I still think its tasty since I love hazelnut...
