Easy Apple Cider

I thought I'd try to make some hard apple cider and it turned out great!

Beer: Easy Apple Cider Style: Cider
Type: Extract Size: 7/8 gallons
Color:
16 HCU (~10 SRM)
Bitterness: 0 IBU
OG: 1.137 FG: 1.020
Alcohol: 15.1% v/v (11.9% w/w)
Water: Pasturized apple cider from the supermarket (1 gal)
Grain: 3/4 lb. Sugars in Juice (Do NOT add this, just for OG calc)
Boil: 10 minutes SG 1.641 3/16 gallons
2.5 lb. Fructose (or 5 cups)
In 3 cups of apple juice,
add
3 TBS Lemon Juice,
1/2 tsp pumpkin pie spice
1/2 tsp cinnamon
1/8 tsp yeast nutrient
1/4 tsp irish moss
Hops:
Yeast: Lalvin Dried Champange Yeast (pitched dry right into jug)
Log: Remove 6 cups of cider from the gallon jug it came in. Leave the rest in there and keep the lid on. Drink or set aside 3 cups of the juice. Put the other 3 cups in a sauce pan for the boil. Add all ingredients, boil for 10 min. Pour back into jug of juice. Mix well and pour off some to leave a little head space and get a hydrometer reading. Pitch yeast. attatch air lock. Swirl in yeast after 20 min. Bubbles right away.
