Old Woodie #4 Honey Ale

Brewed this up for my yearly 4th of July party. The guests drank up all but my last stash. It is dry, spicy, light and a good hot holiday beer.

Beer: Old Woodie #4 Honey Ale Style: American Pale Ale
Type: Extract w/grain Size: 5 gallons
Color:
4 HCU (~4 SRM)
Bitterness: 24 IBU
OG: 1.045 FG: 1.011
Alcohol: 4.4% v/v (3.4% w/w)
Water: I filter my water from the tap. 1 tsp. Gypsum in the boil.
Grain: 8 oz. German Pilsner
Steep: 160° for 30 minutes
Boil: 60 minutes SG 1.075 3 gallons
3 lb. Light dry malt extract
2 lb. Honey
1/4 tsp Irish moss at 30 minutes
Hops: 1.5 oz. Cascade (6% AA, 60 min.)
.25 oz. Saaz (3.75% AA, 15 min.)
.5 oz. Cascade (aroma)
.25 oz. Saaz (aroma)
Yeast: Wyeast American Ale Yeast
Log: In the bottle for almost 4 weeks before serving. Yummy.
Tasting: I think I would had another 1/2 lb of Honey next time.
