Grain: 1 lb. American crystal 20L
1 lb. American chocolate
Steep: Steep the following in the honey and molasses then add to the wort
at 45 min.
3 Cinnamon sticks
15 Whole Clove
9 Whole Allspice
1 tsp. Ground Nutmeg
1 Whole Vanilla Bean (sliced lengthwise in quarters)
1 1/2 oz. Sugared Ginger
Zest from 3 Oranges
Boil: 60 minutes SG 1.159 3 gallons
9 lb. Amber dry malt extract
1 lb. Honey
0.125 lb. Molasses
Hops: 1 oz. Cluster (7% AA, 60 min.)
1 oz. Willamette (5% AA, 15 min.)
1 oz. Fuggles (aroma)
Yeast: Wyeast 1007
Log: Brewed 21OCT99 OG 1.080 (10.8%)
2ndary 28OCT99 SG 1.030
3rdary 12NOV99 SG 1.018 (racked with 1T geletin in 16oz water)
Bttl'd 19NOV99 FG 1.016 (2.2%) primed w/ 1 1/4 cup DME
Tasting: Everything seems to be blending very well with each other with nothing
overpowering anything else(24DEC99).
