XMas Ale

Tasty winter warmer similar to Great Lakes Xmas Ale.

Type: Extract w/grain Size: 5 gallons
Color:
87 HCU (~32 SRM)
Bitterness: 24 IBU
OG: 1.069 FG: 1.012
Alcohol: 7.3% v/v (5.7% w/w)
Grain: 8 oz. American crystal 60L
4 oz. British chocolate
Steep: 30 minute steep at 155°.
Boil: 45 minutes SG 1.114 3 gallons
3 lb. Amber dry malt extract
3 lb. Dark dry malt extract
1 lb. 8 oz. Honey
Add honey and irish moss at 15 minutes.
Hops: 2 oz. Hallertauer (4.25% AA, 60 min.)
1 oz. Cascade (6% AA, 15 min.)
Yeast: Wyeast 1056
Log: Primary 8 days @ 68°.
Secondary 10 days @ 68°.
At secondary add spices to secondary (2 sticks cinnamon, 1/4 tsp ground clove, 1/2 tsp nutmeg, 1 split vanilla bean).
Carbonation: 3/4 cup priming sugar. Bottle conditioned.
Tasting: Nice spice aroma, especially at warmer temp - don't serve at 40°. Not a lot of malt character compared to Great Lakes - would go partial mash next time adding 2 lb pale malt, l/2 lb light crystal & maybe 1/2 lb dark crystal and take out 1.5-2 lbs of DME. Still, a very nice winter warmer.
