Steep: Steep grains @ 150 d for 30 minutes in 1 gallon of water. Sparge with 1/2 gallon of 150 d water.
Boil: 60 minutes SG 1.122 3 gallons
3.30 lb. Light malt extract
5.01 lb. Extra light dry malt extract
2.0 oz. Corn sugar
Add DME, liquid extract, Malto Dextrin and 1 3/4 oz Northern Brewer hops. At 15 min. left add Irish Moss, 1/4 oz of Northern Brewer hops, 1/2 tsp Nutmeg, and 2 tsp ground cinnamon, 1/2 oz dried ginger. At 1 min left add 1 vanilla bean split lengthwise.
Hops: 1.76 oz. Northern Brewer (8.5% AA, 60 min.)
0.24 oz. Northern Brewer (8.5% AA, 15 min.)
Yeast: Wyeast 1332 Northwest Ale
