Punkin' Ale!

What a treat it was last year. This time I am brewing a month sooner so that it is well conditioned by Halloween.

Beer: Punkin' Ale! Style: American Pale Ale
Type: Partial mash Size: 5.5 gallons
Color:
15 HCU (~9 SRM)
Bitterness: 32 IBU
OG: 1.064 FG: 1.010
Alcohol: 7.0% v/v (5.5% w/w)
Water: 1tsp Gypsum to spring water
Grain: 8 lb. American 6-row
1 lb. American crystal 40L
58 oz. Pumpkin
Mash: 66% efficiency
Protien Development Step Mashing
Boil: 75 minutes SG 1.078 4.5 gallons
3.3 lb. Light malt extract
8 oz. Brown sugar
With 10 Minutes remaining added:
1tsp Cinnamon
1 Vanilla Bean (Chopped)
1/2tsp Nutmeg
1/4tsp Allspice
1/2tsp Dried Ginger
5 piece of Clove
All Fresh ground except the Clove which was left whole.
Hops: .5 oz. Cascade (6.8% AA, 75 min.)
2.1 oz. Willamette (5% AA, 75 min.)
1 oz. Crystal (aroma)
Yeast: WLP051 Califonia Ale Yeast
Log: 8/23/8 Pitched Yeast @ 82°F
8/29/8 Transfered to Secondary
Hope to bottle before 9/11/8 but may have to wait til return from Ireland on the 21st
Carbonation: 2.3 volumes Corn Sugar: 4.21 oz. for 5 gallons @ 80°F
Tasting: Next year, as I said last year, I must figure a better way to handle the spaging of the grain/pumpkin due to it getting stuck. Possible use of whole chopped pumpkin instead of Libbys puree.
