Raspberry Summer Ale

This recipe is a mofification of an earlier wheat beer with raspberry extract. I added frozen raspberries to try for a more wine-cooler-like taste. I want a fruity, light summer drink. I expect that this will be one for the ladies, but also refreshing for anyone.

Type: Extract Size: 6 gallons
Color:
5 HCU (~4 SRM)
Bitterness: 7 IBU
OG: 1.080 FG: 1.020
Alcohol: 7.7% v/v (6.1% w/w)
Water: Softened well-water. Our water tends to a lot of iron and other minerals.
Boil: 60 minutes SG 1.160 3 gallons
3.08 lb. Light dry malt extract
3.39 lb. Wheat extract
5.14 lb. Honey
1 tsp. Irish Moss at last 15 minutes. Added 6 lbs. frozen raspberries to primary, poured hot wort over raspberries.
Hops: 1 oz. Cascade (6% AA, 60 min.)
Yeast: 22 grams of Nottingham Ale yeast
Log: To primary 2/27/2004 - fermentation started early and ran continuous for 4 days.
To secondary 3/4/2004.
Carbonation: Add 4 oz. raspberry natural extract at bottling.
5 oz. cane sugar
Tasting: 04/02/2004 - Tasted after 2 weeks in the bottle and this is a really good fruit-beer. Taste is similar to a wine cooler and alcohol content is high. Think this will be one of my more popular ales.
