Steam Boat Ale

12 HCU (~8 SRM)
Bitterness: 35 IBU
OG: 1.047 FG: 1.014
Alcohol: 4.2% v/v (3.3% w/w)
Grain: 3 lb. British pale
8 oz. Wheat malt
1 lb. German Munich
1 lb. 8 oz. American crystal 10L
8 oz. Dextrine malt (Cara-Pils)
8 oz. British Carastan light
8 oz. Flaked barley
1 lb. Rolled oats
Steep: Mash grains @ 155 degrees for 60 minutes or so. Sparge with enough strike water until you have at least 4 gallons, five is better.
Boil: 60 minutes SG 1.047 5 gallons
3 lb. Light malt extract
Get a hard rolling boil going. After 10 minutes in go the Nothern Brewer. 1/2 the Hallertaur @ 45 minutes and the Irish Moss. The other 1/2 goes in @ 58 minutes.
Hops: 1 oz. Northern Brewer (8.5% AA, 60 min.)
.5 oz. Hallertauer Hersbrucker (5% AA, 15 min.)
.5 oz. Hallertauer Hersbrucker (aroma)
Yeast: Two packages of SafLager yeast. This stuff kicks ass! It'll get the fermentor BOILING in an hour. Don't be afraid to try this product. It is a great value as well.
