17 HCU (~11 SRM)
Bitterness: 29 IBU
OG: 1.052 FG: 1.013
Alcohol: 5.0% v/v (3.9% w/w)
Water: 1 tsp Gypsum
Grain: 1 lb. 0 oz. American 6-row
1 lb. 0 oz. American Vienna
8 oz. Dextrine malt (Cara-Pils)
Mash: 70% efficiency
Use 1.1 qts of water per lb of grain and single infusion at 153ºF.
Boil: 60 minutes SG 1.046 6.25 gallons
5 lb. 0 oz. Amber dry malt extract
Add 1 tsp Irish when 15 minutes left in boil.
Hops: 1 oz. Perle (8.1% AA, 60 min.)
.5 oz. StrisselSpalt (3.4% AA, 15 min.)
.5 oz. StrisselSpalt (aroma)
Yeast: Use WL or Wyeast Califorina and at least 500 ml starter. Areate wort well before pitching at 72ºF.
Log: Ferment at 67º for 5 days then rack to secondary. Ferment in secondary for 10 to 12 days before bottling. Gelatin may be added last two days in the secondary.
Carbonation: 2.6 volumes Corn Sugar: 4.90 oz. for 5.25 gallons @ 68°F
Tasting: Yummy!
