Apricot Ginger Wheat Ale

My first fruit beer. I decided to use a combination of 1 three lb can of apricaot puree in the secondary fermenter, and one bottle (4 oz) of apricot extract added at bottling.

Brewer: Brewess Email: -
Beer: Apricot Ginger Wheat Ale Style: fruit beer
Type: Extract Size: 6 gallons
Color:
6 HCU (~5 SRM)
Bitterness: 25 IBU
OG: 1.045 FG: 1.014
Alcohol: 4.0% v/v (3.1% w/w)
Boil: 70 min minutes SG 1.039 7 gallons
6 lb. wheat/barley DME
Added two oz of grated ginger at start of boil.
Hops: 1.5 oz. Cascade (5.8% AA, 60 min.)
Yeast: Wyeast 1272
Log: Brewed on 7/29. Pitched yeast at 74° and fermented at 70-72°. Racked to secondary on 8/2 on top of 1 three lb can of apricot puree. Bottled on 8/8 with one 4 oz bottle of apricot extract. Final gravity was actually 1.011.
Carbonation: 3/4 cup corn sugar
Tasting: Very drinkable by mid-Ausust. Good fruit flavor. Tart and dry. Continues to improve. One of my favorite beers. As good as Sam Adams Cherry Wheat.

Next time, I would add ginger at end of boil and increase it to three oz. It's there, but I would like to taste it a bit more.
