Maineiac Blueberry Wheat

This recipe is a cousin of Skotrat's B52 recipe. Changes include adding blueberry flavoring, experimenting with honey malt (thanks Bill Pierce) and the use of Mt. Hood as the bittering and Liberty as the aroma hop. This will be a nice summertime beer. If you have fresh blueberries handy spoon some on top after pouring a pint.

Water: Poland Springs water
1 tsp gypsum per 5 gallons of water used.
Grain: 4 lb. 4 oz. British pale
3 lb. 4 oz. Wheat malt
8 oz. Dextrine malt (Cara-Pils)
1 lb. Honey Malt (Canada)
Mash: 75% efficiency
1.25 qt water per lb of grain
Protein Rest Temp: 122°F (30 min)
Sugar Rest Temp: 154°F (60 min)
Mash-out Temp: 168°F (10 min)
Sparge Temp: 170°F (45 min)
Boil: 90 minutes SG 1.053 6.25 gallons
2 lb. Honey
1 tsp. Irish Moss (15 min)
Add the honey at the end of the boil
Hops: 1 oz. Mt. Hood (5.3% AA, 45 min.)
.5 oz. Liberty (4.8% AA, 20 min.)
.5 oz. Liberty (4.8% AA, 5 min.)
Yeast: Wyeast American Ale 1056 (a good neutral yeast that should help bring out the blueberry flavoring).
Log: Primary Fermentation: 10 days at 65°F
Secondary Fermentation: 21 days at 65°F
Add blueberry (or other) flavoring (4-8oz) to taste at bottling time.
