Dahlgren Dunkelweizen

Been wanting to try a Dunkelweizen -- getting ready to move to beautiful Dahlgren, so the name came naturally.

Type: Extract w/grain Size: 5 gallons
Color:
55 HCU (~23 SRM)
Bitterness: 12 IBU
OG: 1.061 FG: 1.014
Alcohol: 6.1% v/v (4.8% w/w)
Water: 1 tsp gypsum in steeping water.
Grain: 4 oz. British chocolate
4 oz. Belgian black malt
6 oz. American crystal 20L
Steep: Steep grains in hop bags at 155° F for 30 min, then raise to boiling.
Boil: 60 minutes SG 1.102 3 gallons
2 lb. Light dry malt extract
5.5 lb. Wheat extract
Hops: 1 oz. Hallertauer (4.5% AA, 60 min.)
1 oz. Hallertauer (4.5% AA, 5 min.)
Yeast: Wyeast 3068 Weihenstephan -- made 750 ml starter in Bushmill's bottle with 5T wheat malt.

Measured OG 1.058
Measured FG 1.018
Carbonation: 1-1/4 cup wheat DME
Tasting: Perfect clove and banana -- sweet but not too much -- this one is about perfect, and got rave reviews from friends and colleagues. Don't forget to roll the bottle to mix the yeast in.
