Uncle Dunkel

I usually only brew this style in the fall, but why not serve it in the spring too? Prost!!

Type: All grain Size: 5.5 gallons
Color:
36 HCU (~17 SRM)
Bitterness: 10 IBU
OG: 1.053 FG: 1.010
Alcohol: 5.5% v/v (4.3% w/w)
Grain: 6 lb. Wheat malt
2 lb. German Vienna
2 lb. German Munich
6 oz. Carafa II
1 lb. Rice hulls
Mash: 75% efficiency
60 min at 153°F, mash out at 160°F for 10 min, continuous sparge with 170°F water to collect 7.5 gallons in brewpot.
Boil: 60 minutes SG 1.039 7.5 gallons
Hops: 1 oz. Hallertau (2.7% AA, 60 min.)
Yeast: White Labs 300 (Hefeweizen)
Log: Primary at 65°F for 7-10 days. Secondary at 65°F for 14 days.
Carbonation: 3.8 volumes Keg: 22.6 psi @ 35°F
Keg and force carbonate.
