Wanted to make a Hefeweisen style beer, with a darker tint, and a little less sweetness.

Bitterness: 27 IBU
OG: 1.056 FG: 1.011
Alcohol: 5.8% v/v (4.6% w/w)
Water: PUR filterd H2O
Grain: 8 oz. Wheat malt
4 oz. British black patent
Steep: Normal
Boil: 60 minutes SG 1.093 3 gallons
4 lb. Light malt extract
3 lb. Wheat extract
4 oz. Honey
None
Hops: 1 oz. Spalt (6.75% AA, 60 min.)
1 oz. Hallertauer (4.25% AA, 30 min.)
.5 oz. Spalt (6.75% AA, 15 min.)
Yeast: Re-Pitched Wyeast Weihenstephan Wheat
Log: Brewed 23 Feb 03. Bottle 1 Mar 03. Very nice product. Could be a hard one to reproduce, but will attempt again next year.
Carbonation: 4.0 volumes Corn Sugar: 8.46 oz. for 5 gallons @ 69°F
Tasting: No improvements needed. Very good beer!
