8 oz. Dextrine malt (Cara-Pils)
5 lb. Raw wheat
Mash: 75% efficiency
Protein rest at 122 degrees for 30- minutes, raise mash temp to 152 degrees for 60- minutes or until conversion is complete. Mash out at 168 degrees for 20 minutes, sparge until 6.5 gallons of wort is collected.
Boil: 60 minutes SG 1.043 6.5 gallons
NO irish moss
Hops: 0.75 oz. Hallertauer (4.25% AA, 60 min.)
0.5 oz. Hallertauer (4.25% AA, 30 min.)
.5 oz. Hallertauer (aroma)
Yeast: Wyeast Bavarian Wheat, pitch slurry of 1000ml starter
Log: Primary 1- week, secondary one week, both at 68 degrees.
Carbonation: Prime with 3/4 cup corn sugar
