Happy Harry's Weizen Beer

After spending 10 years in Germany and drinking Weizen Beer I was anxious to brew my own Weizen beer and I am very pleased with the results.

Type: Extract Size: 5 gallons
Color:
3 HCU (~3 SRM)
Bitterness: 7 IBU
OG: 1.056 FG: 1.018
Alcohol: 4.9% v/v (3.8% w/w)
Water: I used Bottled water
Boil: 60 minutes SG 1.139 2 gallons
6.6 lb. Wheat extract
12 oz. Corn sugar
Hops: 0.5 oz. Perle (8% AA, 60 min.)
0.25 oz. Saaz (3.75% AA, 15 min.)
Yeast: White Labs Hefeweizen
Log: Fermented at 68 degrees for 7 days and bottled.
Carbonation: Primed with 6 ounces of corn sugar before bottling
Tasting: Good Beer, very much like a good German Weizen Beer, strong and hearty.
