Two of my favorite fall traditions Bowhunting and Dunkelweizen!! Prost!!

Type: All grain Size: 5.5 gallons
Color:
30 HCU (~15 SRM)
Bitterness: 13 IBU
OG: 1.052 FG: 1.010
Alcohol: 5.5% v/v (4.3% w/w)
Water: 1 TBS 5.2 Mash Stabilizer, 1 tsp gypsum
Grain: 4 lb. Wheat malt
2 lb. German Vienna
3 lb. German Munich
8 oz. Belgian CaraMunich
4 oz. American chocolate
Mash: 80% efficiency
60 min at 153°F, mash out at 160°F for 10 min, continuous sparge with 170°F water to collect 7 gallons in brewpot.
Boil: 60 minutes SG 1.041 7.0 gallons
Hops: .5 oz. Tettnanger (4.25% AA, 60 min.)
.25 oz. Tettnanger (4.25% AA, 30 min.)
.25 oz. Tettnanger (4.25% AA, 15 min.)
Yeast: White Labs 380 (Hefeweizen IV) in a 1 quart starter.
Log: Primary at 65°F for 7-10 days. Secondary at 65°F for 14 days.
Carbonation: 3.8 volumes Keg: 22.6 psi @ 35°F
Keg and force carbonate.
