White Christmas

Brew made for distribution at our annual Christmas party.

Beer: White Christmas Style: Belgian White (Wit)
Type: Extract w/grain Size: 5 gallons
Color:
2 HCU (~2 SRM)
Bitterness: 17 IBU
OG: 1.047 FG: 1.010
Alcohol: 4.7% v/v (3.7% w/w)
Grain: 2 oz. Flaked wheat
Steep: Steep @ 155 degrees for 15 minutes. Remove and sparge.
Boil: 60 minutes SG 1.047 5 gallons
4 lb. Wheat extract
2 lb. Honey
Use orange blossom honey. Add 1/4 oz. of corriander and 1/2 oz. of orange peel at last 15 minutes of boil. Add another 1/4 oz. of corriander during cooling for aroma. Add one tablespoon of Irish Moss at last 15 minutes of boil.
Hops: 1 oz. Hallertauer (4.25% AA, 60 min.)
.5 oz. Hallertauer (4.25% AA, 5 min.)
Yeast: Wyeast Belgian Wit (# 3944)
Log: Ferment at room temp. Rack after bubbling slows past 30 seconds. Bottle once bubbling reaches 1.5 minute intervals.
Carbonation: Added 3/4 cup corn sugar for priming.
Tasting: Used plastic buckets that had been damaged with bleach. Should have been good. Would have used more corriander. Consider adding to secondary.
B-brite and Idophor are your friend.
