Witty Dog

A nice, crisp, citrusy thirst-quencher.

5 HCU (~4 SRM)
Bitterness: 15 IBU
OG: 1.052 FG: 1.009
Alcohol: 5.6% v/v (4.4% w/w)
Water: Use Pittsburgh-area tap water for mash and sparge. Seems to work okay. Used bottled spring water to top-off to 5.25 gallons after the boil.
Grain: 6.5 lb. American 2-row
1 lb. Rolled oats
5 lb. Flaked wheat
Mash: 62% efficiency
Single infusion mash at 152 degrees F. for about 75 minutes. Mash on the thin side, about 1.3 quarts/pound. Used 1-minute Quaker Oats. Broke down nicely due to the diastatic power of American 2-row. Sparge by hand through a steel collander to 3.5 gallons.
Boil: 75 minutes SG 1.079 3.5 gallons
Tablespoon Irish Moss Flakes at 15 minutes remaining
3/4 ounce of freshly-crushed corriander at 5 minutes remaining
3/4 ounce bitter orange peel at 5 minutes remaining
1 ounce sweet orange peel at 5 minutes remaining
Hops: 1 oz. Saaz (3.75% AA, 60 min.)
.5 oz. Saaz (3.75% AA, 45 min.)
Yeast: White labs Belgian Wit
Log: Pitched 1/3 gallon starter
Primary for 7 days
Secondary for three weeks
Carbonation: 4 ounces of cane sugar to prime
Decently carbonated after only four days, but it's not quite done
Tasting: Very nice light flavors. Smoothness from the oats evident, very little hop presence. Orange and corriander come out nicely. Dry aftertaste. A good session beer for a hot evening!
