2013 Late Summer Wheat

First Brew in a while - planning a late summer "drink it till it's gone" party.

Brewer: The Red Stoners Email: -
Beer: 2013 Late Summer Wheat Style: Belgian White (Wit)
Type: Extract w/grain Size: 5 gallons
Color:
6 HCU (~5 SRM)
Bitterness: 30 IBU
OG: 1.051 FG: 1.008
Alcohol: 5.6% v/v (4.4% w/w)
Water: Poland Spring bottled water
Grain: 10 oz. German Pilsner
10 oz. Wheat malt
0 oz. Belgian biscuit
Steep: Steep/Mini-mash - protein rest 135°for 30min, 155° for 45min, raise to 165° for 10 min, and drain thru strainer into wort boil pot.
Boil: 60 minutes SG 1.085 3 gallons
3.2 lb. Light malt extract
3.2 lb. Wheat extract
0 oz. Corn sugar
Add juice and outer peel of 2-3 oranges and/or lemons and a heaping tsp of corriander and 1/4 tsp of black pepper(crushed)to the last 3-4 minutes of boil.
Hops: 2 oz. Saaz (3.2% AA, 60 min.)
.5 oz. Hallertauer (4.0% AA, 45 min.)
.5 oz. Hallertauer (4.0% AA, 30 min.)
1 oz. Hallertauer (4.0% AA, 15 min.)
Yeast: I like to use two yeasts and let them fight it out.
Wyeast #1010 American Wheat
and
Wyeast #3056 Bavarian Wheat
Carbonation: 2.3 volumes Corn Sugar: 3.59 oz. for 4.8 gallons @ 65°F
...or ~3/4 cup corn sugar
