Got a great deal on some 6lb NW wheat malt Extract, so the whole Bock thing hit me and away we went!

Type: Extract w/grain Size: 5.5 gallons
Color:
28 HCU (~15 SRM)
Bitterness: 11 IBU
OG: 1.082 FG: 1.020
Alcohol: 7.9% v/v (6.2% w/w)
Water: Tap water with Cal. Cloride to lower mash PH or for a better mash-in
Grain: 6 oz. American chocolate
Steep: Steeped Grains in a muslin Bag at 155° F for 45 minutes, Mash out at 165° F for 10 minutes and rinse grains with water at 165 from another Pot, bringing up to the 3 gallon boil mark
Boil: 60 minutes SG 1.149 3 gallons
12 lb. Wheat extract
Irish Moss last 10 minutes of Boil, and 2 tsp Yeast Nutrient
Hops: 1 oz. Hallertauer (5.0% AA, 60 min.)
1 oz. Hallertauer (4.25% AA, 30 min.)
Yeast: WP301, Wyeast 3056 makes a great german brew, and the guys tell me that 3333 is awsome....... this was WP301 or the standard Hefe yeast from White labs
Carbonation: 3.0 volumes Corn Sugar: 5.50 oz. for 5.1 gallons @ 60°F
