Drunken Dunkel 1-Reg

This was my first attempt at a dunkelweizen, so I did two slightly different versions. This one, 1-Reg, was my attempt at a regular dunkel, although this is a higher alcohol content in comparison with the normal style parameters. It turned out very nicely, with the textbook banana clove finish, but still has a lot of kick.

Type: Extract w/grain Size: 5.0 gallons
Color:
52 HCU (~22 SRM)
Bitterness: 11 IBU
OG: 1.069 FG: 1.018
Alcohol: 6.6% v/v (5.2% w/w)
Grain: 8 oz. American crystal 40L
4 oz. American chocolate
4 oz. American black patent
Steep: Steep grains until boil.
Boil: 60 minutes SG 1.099 3.5 gallons
2 lb. Light dry malt extract
6.6 lb. Wheat extract (liquid extract)
Hops: 1 oz. Hallertauer (3.8% AA, 60 min.)
1 oz. Hallertauer (3.8% AA, 5 min.)
Yeast: Liquid WLP 300 Hefeweizen Ale
Log: 7/30/05 Brewed, Note that this yeast kicks in immediately the very first day, so watch your airlock for first day clogging. After the first day though, it was fine, so a blowoff system was not needed.
8/6/05 Transferred to Secondary
8/13/05 Bottled 50 12oz
8/20/05 First Taste
OG 1066 FG 1018 Alcohol 6.3% ABV
Carbonation: 5 oz priming sugar.
Tasting: A very nice smooth tasting classic dunkel, with a kick. A subtle banana clove finish, but very, very, smooth and refreshing. I am very pleased with the results. See Drunken Dunkel 2-Dark for an alternative recipe.
