Dirty Honey Dunkel

This beer is a mildly sweet very smooth and mellow Dunkelweizen. This is truly the best beer I have made. The alcohol content is just enough to notice after a couple. Great beer, try it!!

Type: Extract w/grain Size: 5 gallons
Color:
53 HCU (~23 SRM)
Bitterness: 17 IBU
OG: 1.074 FG: 1.020
Alcohol: 6.9% v/v (5.5% w/w)
Water: Good old Southern Oregon tap water
Grain: 1.0 lb. Wheat malt
8 oz. American crystal 120L
6 oz. Belgian chocolate
Steep: steep at 155 for 30 minutes.
Boil: 60 minutes SG 1.123 3 gallons
7 lb. Wheat extract
2 lb. Blackberry Honey
Hops: 2.0 oz. Tettnanger (3.6% AA, 60 min.)
1.0 oz. Hallertauer (4.5% AA, 15 min.)
Yeast: Wyeast #3068 Weihenstephen Weizen
Log: I brewed this batch on 5/25/05, moved to secondary on 6/4/05 and bottled on 06/16/05. Fermentation temp was about 75 degrees. I let it set longer than normal,I think it was a good thing.
Carbonation: 4 oz. corn sugar
Tasting: This beer was good at two weeks and just kept getting better! I found it's true finished taste at about 4 weeks. Good beer! I truly recommend if you like a great tasting beer.
