Carlsbrew Dunkelweizen

I'm not a huge fan of wheat beer, but got interested in the style for an upcoming AHA Club Only competition. Color is actually darker than shown here.

Type: Extract w/grain Size: 5 gallons
Color:
16 HCU (~10 SRM)
Bitterness: 11 IBU
OG: 1.054 FG: 1.012
Alcohol: 5.5% v/v (4.3% w/w)
Grain: 1 lb. German Vienna
1 lb. Dextrine malt (Cara-Pils)
Steep: Steeped grains in grain bag for 30 mins in 4 gallons 160°F water.
Sparged with 2 gallons 170°F water.
Boil: 60 minutes SG 1.045 6 gallons
6.6 lb. Wheat extract
Added extract and boiled for 10 mins.
Added hops and boiled for 35 mins.
Added 1 tbs Irish Moss and boiled for 15 mins,
Hops: 1 oz. Hallertauer (3.1% AA, 60 min.)
Yeast: Wyeast #3068 Weihenstephan Wheat.
No starter, smacked 12 hrs prior to pitching.

Fermentation 16 days in glass at 65°F

Carbonation: Force carbonated at 30 psi at 45°F using carbonation stone
Tasting: I think I nailed this one according to style. I was shooting for a Bavarian Weizen, but I think it is more appropriate as a Bavarian Dunkelweizen due to the darker color from the extract I used. Banana aroma is right up front. Head is fantastic.Purposely left some yeast in suspension.Creamy, malty flavor also spiceiness from yeast. Will see how it fairs in competition.
