celebration weizen

I brewed this weizen to celebrate my admission to medical school for next fall. It should be nice and malty and fruity.

Bitterness: 19 IBU
OG: 1.058 FG: 1.015
Alcohol: 5.6% v/v (4.4% w/w)
Grain: 2 lb. Belgian Pilsner
6 lb. Wheat malt
3 lb. German Munich
.5 lb. Belgian aromatic
.5 lb. Dextrine malt (Cara-Pils)
.5 lb. german light crystal
Mash: 75% efficiency
I did a step infusion mash with a single decoction.

90 deg. f - 20 min
122 - 30
154- 70
pull decoction (1/3) and boil for 30
170 - 20 min

Boil: 90 minutes SG 1.044 8 gallons
1 tbs irish moss last 25 min.
Hops: 1 oz. Mt. Hood (4.5% AA, 90 min.)
.5 oz. Tettnanger (4.5% AA, 25 min.)
.5 oz. Tettnanger (aroma)
Yeast: 1 qt starter of wyeast #3068, weihenstephan wheat
Log: brewed 6/5/99

fermented at 65 degrees for 10 days
Carbonation: bottle condition with 8/10 cup corn sugar for medium-high carbonation.
