Honey Nipple Delight (o)(o)

This is my first attempt at a wheat beer. My aim is not to make it too
bitter as I want the emphasis to be on the honey, lemon and wheat tastes!

Brewer: MacPhisto Email: -
Beer: Honey Nipple Delight (o)(o) Style: Weizen/Weissbier
Type: Extract w/grain Size: 12 liters
Color:
9 HCU (~7 SRM)
Bitterness: 11 IBU
OG: 1.055 FG: 1.012
Alcohol: 5.5% v/v (4.3% w/w)
Water: Christchurch NZ - Tap Water
Grain: 1.7kg Raw wheat
Steep: Wheat was ground in blender then left in water prior to boil for 25
mins. Water was then strained through sieve. I found this method to be
very effective although it was somewhat time consuming. Would
definitely recommend to others. Best method found to be leaving
blender on second setting for roughly 20 seconds with half a jug of wheat.
Boil: 55 minutes SG 1.073 9 liters
1.5kg Light malt extract
800g Honey
Two small lemons were added to the boil at 45 mins. 800 gm of
honey was added to the boil at 30 mins. One large lemon and one small
lemon were then added to the boil at 5 mins.
Hops: 5g NZ Southern Cross (12.7% AA, 55 min.)
15g Saaz (aroma)
Yeast: Safale Dryed Yeast
Log: Fermentation started after 4 hours. Primary fermentation left for six
days. Secondary fermantation left for one week. Lemon rinds carried
over and put into the second fermenter. Bottled on Tues 21/10/03.
Carbonation: One level teaspoon of white sugar per 700ml bottle
