My First Hefe-weizen

While using my immersion chiller one of the tubes came off we have about 4-6 cups extra water than I wanted we will see how it turns out.

Type: Extract w/grain Size: 6 gallons
Color:
4 HCU (~4 SRM)
Bitterness: 19 IBU
OG: 1.053 FG: 1.012
Alcohol: 5.3% v/v (4.2% w/w)
Grain: 0.58 lb. Wheat malt
0.58 lb. German Munich
Steep: I steeped the grains until just before the boil then I removed them.
Boil: 60 minutes SG 1.053 6 gallons
0.58 lb. Light malt extract
6.90 lb. Wheat extract
0.58 lb. Honey
I did put in Irish moss for the last 15 minutes of the boil.
Hops: 1.06 oz. Northern Brewer (8.5% AA, 30 min.)
Yeast: I used Easyeast Weinstepan wheat liquid yeast.
Log: This was brewed on Aug 8, 2003. I will bottle a week from today.
Carbonation: I plan on using 3/4 cup priming sugar at the time of bottling.
