Wurzig Weizen

This was based on a recipie in the Homebrewer's Bible, but brewed in a unique manner with an altered hop aroma.

Beer: Wurzig Weizen Style: Weizen/Weissbier
Type: Extract w/grain Size: 5.5 gallons
Color:
3 HCU (~3 SRM)
Bitterness: 6 IBU
OG: 1.039 FG: 1.012
Alcohol: 3.5% v/v (2.8% w/w)
Water: Fairly hard water
Grain: 2 lb. American 2-row
2 lb. Wheat malt
Steep: Pale and wheat malts steeped at 150 for 45 min.
Boil: 90 minutes SG 1.072 3 gallons
4 lb. Wheat extract
Hops: .25 oz. Perle (7.75% AA, 60 min.)
.25 oz. Saaz (3.75% AA, 3 min.)
Yeast: Wyeast German Wheat Smack pack
Log: 3 gallons of wort brewed without hops additions at all. 1/2 gallon reserved and frozen. Remaining wort diluted to 5 gal., pitched and fermented at 70 for 6 days, until cessation of fermentation. Reserved 1/2 gallon re-boiled with hop additions. Added to remainder of batch like a kreusen. Aged 1 more weeks at 70, bottled and aged at 60 for 2 weeks and 40(refrigerator) for a month.
Carbonation: 1/2 lb. priming sugar into bottling bucket.
Tasting: Very unique hop aroma. Substantially present, but not overwhelming. Iso-amyl acetate dominance in aroma.
