Josie's Colt Oktoberfest Ale

Alcohol: 5.5% v/v (4.3% w/w)
Grain: 8 oz. German Munich
Steep: I steeped the grain in a cheesecloth sack while heating the water. I heated the water quickly to near 150F, then turned down the stove to slow the heating until 170F. Then I removed the grain and turned the stove back up to high to bring the wort to a boil.
Boil: 60 minutes SG 1.075 4 gallons
6 lb. Light dry malt extract
.5 lb. Honey
Add a tsp of Irish Moss 15 minutes before the end of the boil.
Hops: .12 oz. Perle (6.5% AA, 60 min.)
1 oz. Saaz (3.4% AA, 60 min.)
.5 oz. Hallertauer (4.8% AA, 30 min.)
.5 oz. Saaz (3.4% AA, 15 min.)
.5 oz. Saaz (aroma)
Yeast: Danstar Nottingham dry yeast
Carbonation: 2.7 volumes Honey: 6.04 oz. for 5.5 gallons @ 66°F
