Grain: 8.5 lb. German Vienna
14.5 lb. German Light Munich
2 lb. Belgian CaraMunich
2 lb. Wheat malt
Mash: 55% efficiency
Mash with 35.1 qts. water at 158 for 75 min.
Boil: 90 minutes SG 1.046 12 gallons
1 tsp Irish Moss last 15 min of boil.
Hops:
Yeast: Wyeast 2565 Kolsh - 5 gal. - FG 1.012
Wyeast 1007 German Alt - 5 gal. - FG 1.010
Log: Ferment at 65 for 1 week. Transfer to secondary. Ferment for 5 days at 65 then 2 days at 33.
