Alcohol: 4.4% v/v (3.5% w/w)
Grain: 8 lb. 8 oz. German Pilsner
7 lb. 8 oz. American Vienna
8 oz. Dextrine malt (Cara-Pils)
1 lb. Belgian CaraVienne
2 oz. British black patent
2 lb. 4 oz. Flaked corn
Mash: 70% efficiency
30 minutes @ 154 F, Took 1 gallon of first runnings and boiled to half.
Rest mashed at 154F for another 30 minutes.
Boil: 60 minutes SG 1.043 12 gallons
Bit of Irish Moss
Hops: 2 oz. Saaz (3.75% AA, 60 min.)
1 oz. Saaz (3.75% AA, 30 min.)
.5 oz. Saaz (3.75% AA, 15 min.)
Yeast: Wyeast Bohemian Lager, 1.5 quart starter
Log: 1 week at 55 F,
3 days diacetyl rest at 75 F,
5 weeks cold conditioning from 40 down to 32 F
Carbonation: Kegged with forced carbonation
Tasting: Very nice...Scored 32 at the Indiana State Fair. Judges claimed DMS.
Will make again but substitute more Munich malt for corn.
