Czech Black Lager

This is like a schwarzbier but of the Czech variety - some of which
are lower gravity and less dry than German versions. In the Czech
Republic,this would be called a Tmavé (dark) or a Cerné (black).

Bitterness: 26 IBU
OG: 1.045 FG: 1.009
Alcohol: 4.7% v/v (3.7% w/w)
Water: -- Added CaCl2 for 50ppm Ca++ (my water is soft).
-- Added SodMet to all water for chlorine removal and as antioxidant.
Grain: 2.8kg German Pilsner (92%)
120g German Carafa Special III (4%)
60g German CaraAroma (2%)
60g German CaraHell (2%)
Mash: 85% efficiency
-- Single infusion mash at 67ºC, falling to 64ºC after 50min.
Boil: 80 minutes SG 1.039 21 liters
-- 1/2 tsp. Irish Moss.
Hops: 40g Hallertauer Hallertau (4.0% AA, 45 min.)
Yeast: -- 3.0L starter of Wyeast 2000 (Budvar Lager Yeast), 1st generation.
Log: -- First 7 days at 9ºC until 3/4 towards FG.
-- Racked to 2ndry for 7 days diacetyl rest at 16-18ºC.
Carbonation: -- Primed with 1.25L reserved wort for 2.4 vol CO2.
