I was trying for something resembling
a Schneider Weisse,a dark wheat.
since the wheat DME only came in one colour;
I added some dark dme.

Boil: 60 minutes SG 1.152 10 liters
1.5kg Light malt extract
654g Amber dry malt extract
500g Dark dry malt extract
2kg Wheat extract
Hops: 14g Cascade (6% AA, 60 min.)
14g Hallertauer (4.25% AA, 60 min.)
10g Saaz (3.75% AA, 60 min.)
10g Cascade (6% AA, 15 min.)
10g Hallertauer (4.25% AA, 15 min.)
6g Cascade (aroma)
5g Hallertauer (aroma)
6g Saaz (aroma)
Yeast: 3068 Weihenstephan Weizen yeast
Unique top-fermenting yeast which produces the unique and spicy weizen character, rich with clove, vanilla and banana. Best results are achieved when fermentations are held around 68o F. Flocculation low; apparent attenuation 73-77%. (64-75º F)
