1 oz. Centennial (10.6% AA, 35 min.)

Yeast: #2112 California Lager (Make Starter)
Log: 1. (1/15)Estimated NB hops too loow for final IBU; compensated with 1 oz of 10.7% Centennial hanging around.
2. Fermented at higher (lager) temp ~66 - 68°: Completed in 72 hours.
3. (1/17)Racked off of the lees 2 days later. Excellent fruity taste. Kept at 70°.
4. (1/23) A week later adjusted to 45° and added sparkalloid as fining agent (isinglass works poorly on lager yeast).
Carbonation: (2/22) Bottled.
Tasting: Excellent 7 day beer.
After Aging 1 month; good flavor
