Beer: #19 Just Another Steamer Ale Style: American Pale Ale
Type: Extract w/grain Size: 5.25 gallons
Color:
18 HCU (~11 SRM)
Bitterness: 37 IBU
OG: 1.064 FG: 1.010
Alcohol: 6.9% v/v (5.4% w/w)
Water: House tap water for boil. Artesian well water for everything else.
Grain: 2 lb. American 2-row
1 lb. American victory
Steep: 152F for 1/2 hour then 164F for 1/2 hour then the mash out at 177F for 15 minutes. I don't know if these are the proper temperatures but they seem to be where my natural gas stove always ends up.
Boil: 60 minutes SG 1.111 3 gallons
3 lb. Light malt extract
3 lb. Amber malt extract
1 lb. Light dry malt extract
1 teaspoon Irish Moss last 15 minutes of boil.
Hops: 0.80 oz. Nugget (12% AA, 60 min.)
0.4 oz. Nugget (12% AA, 45 min.)
0.80 oz. Fuggles (4.75% AA, 30 min.)
0.4 oz. Fuggles (4.75% AA, 15 min.)
Yeast: 3rd generation White Labs San Francisco Lager harvested from some other previous batch. I used this yeast because of the temperature variation in my basement at this time of year. January 10, 2007. The high temperature outside was only 24F. Stayed that way for 2 weeks.
Log: Fermented 65F-70F for 1 week. Secondary at 65F-70F for 1 week. Basement temperature is usually a constant 68F-70F but with it being so cold outside the temperature took a dip during the night and tried to recover during the day. Also the furnace is down there so it helped try to keep it warm.
Carbonation: 5 ounces corn sugar into bottling bucket then into 12 ounce bottles.
