All American Lager

This is a very good drinking beer. Very light and smooth. Excellant head retention. Very lightly hopped so the malty flavors are very prevelant.

Type: All grain Size: 5.0 gallons
Color:
3 HCU (~3 SRM)
Bitterness: 13 IBU
OG: 1.035 FG: 1.006
Alcohol: 3.7% v/v (2.9% w/w)
Water: 1 tsp gypsum to mash water
Grain: 5 lb. American 6-row
8 oz. American crystal 10L
1 lb. Rice (raw)
Mash: 75% efficiency
Temperature controlled mashing: Cook rice in 6.5 qtrs water for 30 minutes. Let temp drop to 160F. Combine grains. Protein rest at 145F for 15-20 minutes. Raise temperature to 158F using 3.25 qts of 200F water. Test for starch conversion. Sparge with 3.25 gallons 170F water.
Boil: 60 minutes SG 1.028 6.25 gallons
Add hops and boil for 1 hour
add irish moss last 10 minutes
add aroma hops last 2 minutes
Hops: 0.50 oz. Cascade (6% AA, 60 min.)
.25 oz. Cascade (aroma)
Yeast: Wyeast Pilsen lager #2007
Log: Ferment at 65F for 5 days. Rack to Carboy and Lower temp 5F/day until 42F reached. Lager at 42F for 6 weeks.
Carbonation: 2.6 volumes Dried Malt Extract: 7.86 oz. for 5 gallons @ 65°F
